Blending her passions of science, cooking, and baking, Madeleine is a food scientist with a love of research and product development and a dream of putting this knowledge to use in creating unique, delicious taste experiences to delight the sweet side in everyone.

Getting to know Madeleine

Q: Why "The Sugar Lab"?

A: The name is a perfect blend of the sugary confections I love to make and the scientific environment that is home to a food scientist. I also have a black lab named Joy who is often underfoot and, at times, covered with powdered sugar!


Q:What cooking tools can you not live without?

A: I definitely need my Kitchen Aid stand mixer... and my food processor, good knives, a decent oven, ice cream maker, well-made measuring cups and spoons, good pots and pans, a food scale, quality baking pans... oh, and of course my cake decorating supplies!


Q: What is your favorite food to make?

A: I love making personalized creations that are unique and specific to the recipient. Seeing the joy it brings to present customized boked goods is the best reward I can experience. I am also drawn toward anything complicated- intricate things that stretch my abilities and help me grow as a cook.


Q: What is currently your biggest kitchen challenge?

A: Making the perfect pie crust


Q: Tell us a fun-fact about yourself:

A: I learned stage combat sword fighting in college, and I LOVE to swim.


Q: What job would you do if the food industry ceased to exist?

A: I have always been fascinated by acting/ stage make-up as it seems like the perfect blend of technical skill and creativity.


Q: Where would you most like to study?

A: I have always wanted to to study pastry in France.


Q: What are your favorite foods?

A: Since I'm answering this in the middle of summer, my current obsessions are summer fruits. I can't get enough of cantaloupe, strawberries, and watermelon. Soon enough, my beloved Honeycrisp apples will be in season! Fruit desserts are in high demand in my family, but I also love my fruit straight up!


Q: What confection have you made that you are most proud of?

A: A couple of years ago, I donated a Tinkerbell themed cake to Dancers Give Back, an organization devoted to fundraising for cancer research. I relished in the opportunity to use my cake decorating ability to support an important cause, and I expected the cake to be part of the evening’s cake walk. Imagine my surprise (and pride) upon learning later in the evening that my cake had been chosen as a gift for the family in whose honor the fundraiser was held.

A Sweet Memory...

Having only her mother's decades-old memory of making cinnamon ice cream with her great-grandmother, Madeleine set out to bring this recollection into the present day. After relentlessly pursuing the perfect sweet cream base to set the stage, she combined the perfect cinnamon heat to showcase the creamy, rich fudge accompaniment.
